No-Bake Peanut Butter Oatmeal Bites

If you want a quick and easy snack, look no further than these no-bake peanut butter oatmeal bites. They are extremely easy and quick to make, are full of protein, omega fatty acids, and complex carbohydrates, and can be tailored to meet a variety of palate preferences. Best of all, they are kid-friendly; something that kids can help make and then help eat!

Ingredients

  • 1 cup old-fashioned oats
  • ½ cup crunchy peanut butter
  • ⅓ cup honey
  • ½ cup flax-seed, ground
  • 1 teaspoon vanilla extract
  • ½ cup dried fruit (raisins, dried cranberries, chopped dates, etc.) OR ½ cup peanut butter chips (optional)

Instructions

  1. Mix all ingredients until combined.
  2. Refrigerate dough until chilled (about 30 minutes), then roll dough into small (1-inch) balls. Store bites in the refrigerator in an airtight container until ready to serve.
