Spicy Tomato Vegetable Soup Mix

I hike a lot, so make up some mixes to bring with me for easy and fast meals. This spicy tomato vegetable soup mix does not weigh much, but packs a lot of flavor! You can increase the mix to water ratio for an even heartier version.

Ingredients

  • 4 cups dried vegetables
  • 1 cup low-sodium vegetable bullion powder
  • 1 cup tomato powder
  • ¼ cup crushed red pepper flakes
  • ¼ cup chili powder
  • 2 tablespoons smoked salt
  • 2 tablespoons curry powder

Directions

  1. Mix all ingredients together, and store in an airtight container (I keep mine in the freezer).
  2. When ready to use, measure out ¼ cup portions. Add 1.5 cups of boiling water to mix, and let sit until vegetables are slightly soft (about 5 minutes), or add 2 cups water to mix, and bring to boil.
