Grilled Spiced Baby Potatoes

Another very simple recipe, the foil packet makes these potatoes so tender that you won’t believe that they were not cooked in any oil or butter.

Serving Size: one cup

Preparation Time: 2 minutes

Cooking Time: Around 20 minutes (varies)

Ingredients (per packet):

  • 1 pound of baby potatoes
  • 2 teaspoons Montreal steak seasoning

Directions:

1.Wash baby potatoes.

2.Use two sheets of heavy-duty foil to create the surrounding material for the packet. Place one sheet of foil vertically and one horizontally. Place potatoes on the top center of the foil, add seasonings, and then tightly fold up packet, folding over the seam of each sheet of foil (you will want to create as tight a seal as possible to contain the steam released as the potatoes cook).

3.Using tongs, place foil packet, seam-up, on the grill top, grate, or even on fire embers. Note that the closer the packets are to the source of heat, the faster they will cook. Packets are done when potatoes are soft (usually, around 20 minutes of cooking).
